Protein Anyone?
Dear friends,
Turns as if I'm truly hypoglycemic...or in the words of a famous SNL skit, A "Hyper-hypo!" I'm finding that my sugar levels can get all out of whack and I can get to feeling light-headed and faintish. Thankfully I've seen my doctor and he's confirmed I am hypoglycemic (low sugar levels). I'm finding that I need a protein with a complex carb.
Some of my favorite helpful snacks have been apples with natural peanut butter. Cheese and whole grain crackers. Hummus with Kashi crackers. Protein drinks. Yogurt with home made granola. Dried fruit and nuts. Chicken with anything...brown rice, beans, etc. Eggs on a bagel or english muffin.
Do you have any other suggestions? I need protein. Please advise.

I love black bean quesadillas. Cheese, black beans, anything else you want to throw in there, and whole wheat tortillas.

Hmm, you already mentioned one of my fav snacks which is hummus (also good with Low Fat Wheat Thins - YUM!).
Tuna salad (Dophin-friendly) on a slice of wholewheat toast?
Cottage cheese with slices of fresh apples or peaches is pretty darn yummy too.
My parents like cottage cheese w/ salt and pepper
Celery w/ peanut butter
I love protein-rich snacks! David and I have recently discovered plain, fat-free probiotic yogurt with fresh blueberries and chopped nuts (and flaxseeds if you like)...mmm. Edamame pods are also really tasty raw - I get the already cooked edamame pods in the frozen food section at Trader Joes...good stuff! Or hummus with pepper strips...yeah, so I love food :)
